Starting Out

I recently (just starting week two) have decided to try a gluten free diet.  It came about because of some medical problems I am having that our good old university educated doctors can't figure out and after a few minutes on the Internet I realized that gluten intolerance may be an issue for me.

I have to say this has been easier than I thought it would be and I have already found a few things that I love, I just have to remember to watch my calories and portions too.

Last night I made the soup below and it was delicious.  It will definitely be on the menu again and again.  It was bitterly cold outside and the wind was howling so this soup was just perfect to warm us up.  In the future I might add a bit more water, it was more stew-like, but the hubs loved it that way.

Taco Soup

Ingredients
  • 1 – 1½ pounds ground turkey or beef
  • 1 medium onion, chopped
  • 1 package taco seasoning mix (McCormick is currently gf, but always read the label)
  • 1 can small red beans (or kidney beans), drained and rinsed
  • 1 can whole corn, drained
  • 2 cans diced tomatoes (with juice)
  • 1¾ cups water, divided
  • toppings: cheese, sour cream, green onions, etc.
Instructions
  1. Crumble and cook the ground turkey or beef and chopped onion in a skillet until done through. Drain.
  2. Add ¾ cup of the water and the taco seasoning mix to the meat. Cook for several minutes.
  3. Combine all the ingredients in a pot and heat to a simmer. Continue to simmer on low heat for about 30 minutes.
  4. Spoon into bowls and top with your favorite toppings or none at all.
